Salad Shirazi


  • 3 large vine ripened tomatoes, stems and seeds removed, diced
  • 1/2 small red onion, diced
  • 1 large english cucumber, seeded and diced
  • 1 tbsp olive oil
  • 1 tbsp dried mint
  • 1/4 cup - 1/2 cup fresh lime juice (1-2 limes)
  • Salt and freshly ground pepper to taste
  1. In a medium sized bowl, combine the tomato, onion and cucumber. Add the olive oil and mint, then gradually stir in the lime juice, salt and pepper, adjusting to your personal taste. Refrigerate for 1 hour before serving.
